It was a trip to remember!

We spent a few days in Vegas for my birthday! The 10 photos that Instagram allows don’t begin to scratch the surface of all the things we did. Our trip was packed with crazy restaurants, concerts and shows, pool days and shopping excursions.

My sister and her hubby are our official Vegas tour guides, and they haven’t steered us wrong yet.

I’m working on a blog post about our trip and our favorite places to go. Stay tuned…

Who loves a healthy recipe that’s also easy? 🙋🏼‍♀️

This nontraditional cowGIRL caviar calls for edamame (hello protein!) and has so many yummy fresh flavors. I love it as a side with Mexican food and served topped with crumbled queso fundido and extra cilantro.

Full Recipe:
10 oz fresh pico
1/2 cup cherry tomatoes diced
1 red/yellow bell pepper, diced
4 green onions chopped (greens only)
1/2 cup chopped cilantro
1/2 jalapeño diced (or more, depending on your spice preference)
12 oz bag shelled edamame (microwave 4 minutes)
10 bag frozen sweet corn (microwave 3 minutes)
1 can black beans, drained and rinsed
1 lime
1/4 cup olive oil
2 tbsp red wine vinegar
1/2 tsp garlic powder
L1/4 tsp sugar
1/4 tsp salt
1/4 tsp pepper
Add a few dashes if Tabasco sauce to heat it up
Add 2 diced avocados just before serving

It’s a steamy Sunday, but we are soaking up this long weekend!

Tomorrow we’ll spend the day by the pool and possibly watch some fireworks.

It has strawberries, blueberries, goat cheese, spinach and pecans, with a raspberry vinaigrette dressing.
