This is a crowd-pleasing recipe in my house that also fits nicely in my diet. That’s a huge win in my book! I made these for myself when we did family pizza night, and my kids started asking for my food instead of the pizza. Now it’s a staple meal for us.
Any time you are cooking with zucchini as a replacement for bread, you want to manage the moisture. After you hollow out the zucchini, which is much easier than it sounds — trust me, you need to add salt and bake them in the oven. This will get rid of extra moisture and not result in runny pizza bowls — definitely not what we are after. If you want extra flavor, you can add some garlic powder as well. Not a fan of the rubbery zucchini texture? Drizzle with a little bit of olive oil.
Once the zucchini are cooked, finishing the recipe is as easy or complex as you’d like to make it. I like to load up on veggies and meats, but the kiddos prefer plain cheese with bacon bits.
