Tomorrow is one of my favorite holidays — Cinco de Mayo!
I love Mexican food, and while I understand that there’s so much more to the significance of this holiday, it is the perfect excuse to celebrate on a weeknight!
Today I’m sharing five festive recipes that will also help you stay on track with your health goals, whether that is macro tracking, whole30, gluten-free, keto, or low-carb. There’s definitely an option for you here!
The original page for each recipe is linked, or you can click on the images to get to the recipe.
1. Fresh Guacamole
This is the perfect guacamole recipe, and it’s so easy to make. Try dipping fresh slices of bell pepper instead of chips to reduce the carbs and calories.
2. Sheet Pan Shrimp Fajitas
Need to get dinner on the table quick? This is the recipe for you! Make sure to follow the instructions to avoid over-cooking the shrimp.
3. Simple Margaritas
Enjoy margaritas without the added sugar! This recipe uses fresh citrus fruits with a little bit of natural sweetener for the perfect, refreshing drink.
4. Bison Tacos
While this recipe calls for ground bison, it also works with lean ground beef. What you’ll love is all the fresh veggies that are added as the meat cooks! This recipe is also completely gluten-free.
5. Tinga Chicken Taco Bowls
This is a spicy, low carb chicken recipe that is easy to adapt to low-carb or whole30 diets.
Have an amazing Cinco de Mayo, and definitely let me know if you try one of these recipes!
